Princess Cruise Line's Fettucine Alfredo

During times like these, I find peace and comfort by heading to the kitchen – and so should you. That’s why I’m inviting all of you to join me in a Cooking Challenge. I thought it would be a great idea to share this fun, new challenge with all of you so you can cook along with me at home and try your hand at some favorite Cruise Line recipes, since we can’t actually cruise right now. And best of all – relieve some stress in the kitchen.

This recipe is one of the most-ordered items on all of Princess Cruise Line’s ships! Everyone loves Fettucine Alfredo, and this even comes with a bonus parmesan cheese bowl! So pour yourself a glass of wine and get cooking – I can’t wait to see all of your results (post your results on the @Terrie’s Travel Designs Facebook Page) and continue this cooking adventure together during the next several weeks.

Ingredients for Fettucine Alfredo:

1 lb Fettucine noodles (fresh or dried)

4 egg yolks

1 cup heavy cream

½ cup Parmesano Reggiano cheese, grated

Salt and pepper to taste

Fettuccine Alfredo preparation:

• Cook the pasta according to package directions. Drain and set aside.

• Boil ¾ cup of the cream and remove from heat. Whisk egg yolks with remaining ¼ cup cream to form a mixture. Add ¼ cup of the boiled cream to the mixture, stirring constantly. Slowly combine with the rest of the hot cream, whisking. Add Parmesan cheese, adjust seasoning.

• If necessary, reheat pasta in boiling, salted water. Pour sauce over drained pasta & toss.

Serve in the Parmesan cheese baskets with extra cheese and cracked black pepper

For Parmesan cheese baskets:

2 cups Parmesan cheese, grated

Parmesan Cheese Basket preparation:

• Place a non-stick omelet pan on the stovetop over medium heat. Sprinkle the bottom of the pan evenly with approximately ½ cup of the Parmesan cheese. Cook until the color changes to golden.

• Flip the cheese over and cook until golden. Remove the cheese from the pan and place over a mold form or over the bottom of a bowl to create a dome shape. Let cool.
